Lemon & Mint
Ever since moving here, I really crave Mint, daily. It is such a staple in many Arabic dishes. So in order to satisfy my craving but also keep to my Raw lifestyle, I decided to experiment and make my own version. Give it a try!
Lemon & Mint :
I juiced 5 lemons in my trusty Champion Juicer whilst my bunch of mint was rinsing in my sink. Can you believe how strong the smell of mint in your kitchen can overpower your whole house? It was delicious and made me feel like I was on holidays having a Mojito in the Carribean. When the lemons were juiced I took about 2 cups of mint leaves (no stalks) and blended them with additional water and lemon juice. As I know most restaurants use a sugar syrup to sweeten the delicacy I chose to add a tiny amount of raw agave nectar instead. I think raw honey would work just as well, of if you dare, try a couple of dates which are so plentiful in this area. This drink was a hit at my last dinner party. Really it is a stayer!

I keep telling Cody about how amazing this was – I HAVE to make it, maybe today after we spend all day out in the sun on our new bikes. (Yep, we got 2 really awesome bikes! YAY!) I am usually a water only kind of girl, other drinks just don’t appeal to me, but one sip of this and I was HOOKED. I ended up having 3 glasses!

Yeah I got it! So I made it with coconut and some Matcha and lemons, agave and pineapple mint, It was OUT of this world GOOD! Thanks for the heads up on a tasty drink.
