Heading off for our 4th and second last night at AOL. It's like a secret society ;) Anyone else done it before?

Friday night we went to a friends house to watch movies and eat pizza, but I made myself some veggie pasta before we went, and Pat made me an apple juice to take, but we spilt it all over the kitchen before we even had a chance to drink it icon sad Beccis Raw Vegan Birthday Cake Recipe (finally!) and Pineapple Sorbet. So I had to content myself with my bottle of water. But hey, I also made myself some pineapple sorbet with some frozen pineapple. Remember I made Banana Soft Serve? Well I thought I could try it with some other frozen fruit so this time rather than using my food processor, I decided to try my Champion Juicer which has a homogeniser setting. It worked amazing! (bit messy tho!). Can you believe that is ONLY frozen pineapple?

Saturday afternoon, I finally got to meet up with Tasha and Cody from The Voracious Vegan for our long awaited puppy walk with her 3 ‘dingos’ and my puppy Lucy. Was such fun and we hope to do it again. Was nice for the dogs to socialise together off their leashes in the desert. I think Tasha got some photos so I’ll wait for them to appear on her blog. I made us 3 a kicker smoothie to sip on for the hour or so stroll. Here is one of them:

It is getting so hot here not that getting out to walk is silly between 8am and 5.30pm as I discovered yesterday when I took Lucy out for a morning walk at 8.30am. I didn’t walk the whole 6km circuit of the golf course, as I was feeling it and when I got Lucy home, she was VERY thankful for it.

Speaking of pets, I also have a cat Sam, and he lived here before Lucy moved in a few months ago, and he has been spending less time at home and more time in the dirt and at a friends house (even in the heat). I fear that Lucy (very jealous) is pushing Sam out of his home. I have been reprimanding Lucy when I am home and if I see her barking at Sam as he comes in the cat door, and it has helped slightly, with Sam coming home every night for dinner, and sometimes sleeping all day on the couch, but I need some more hints on how to make Sam feel like this is his house too. Or is this just a male cat thing?

Well folks, last but not least here is the recipe I know I promised a few days ago, but here it finally is! The recipe you have all been waiting for! The Raw Vegan Birthday Cake that Becci made for me. If you do try to make it please let me know what you think!!

 Beccis Raw Vegan Birthday Cake Recipe (finally!) and Pineapple Sorbet.

Becci’s Raw Vegan Birthday Cake
Bottom Layer
4 peeled bananas
2 cups of dates soaked for 20mins
1 cup of walnuts soaked overnight, rinsed
2 cups of carob powder
1/2 cup of water

Puree all in a high speed blender. Place in a circular cake tin. Dehydrate until dry (approx 6 hours) on one side then turn over and dehydrate until totally dry (approx 4 hours)

Cream Layer
2 cups of macadmia nuts (soaked overnight)
1 cup of brazil nuts
1 cup of water
Juice of 2 lemons
150g of dried apricots
2 tablespoons of raw honey (or enough to taste sweet)

Puree all in a high speed blender until creamy

Top Layer
1 banana peeled
3 avocados pitted and peeled
1 cup of dates, soaked for 20 mins
2 cups of carob powder/ 1 cup of carob syrup
1 cup of brazil nuts
2 cups of raw cacao powder
handful of almonds

Puree all in a high speed blender then place in the the cake tin on it’s own. Once again dehydrate for approx 6 hours on one side then 3 on the other.

Frosting/Icing
3 avocados
1 cup of dates
1 cup of carob syrup
1 cup of raw cacao powder

Blend until combined. Spread on top of completed cake. YUM
