Quick & Easy Dinner – Quinoa Vegetable Curry Casserole
Hey everyone!!! Sorry for such a brief post today but wowsers, I have just been uber busy, creating dishes in the kitchen and working out as I had such a work heavy week last week I needed to catch up on my kitchen time. Yesterday I ran around like crazy and ending up at Boot Camp/Circuit class with not much fuel in the tank but I gave it a shot anyways. Really I don’t think I had enough to eat, so that was a lesson for next time – make sure to have fuel/food to get me through. Happy Monday!! Did anyone get any surprises last night? I was given a pretty bunch of handpicked flowers…gush Yesterday’s breakfast/lunch was a pudding made in my favourite Tribest Personal Blender. I don’t only use this baby when travelling!! 1/2 cup of oats, 1 whole banana, 1 T raw honey, 1/2 cup of water, 1/4 cup of dried organic coconut, 1/4 cup of goji berries, 1/8 cup of cacao nibs And turned into this! I loved the crunch of the cacao and it gave me plenty of energy Right before Boxing class I nibbled on this: Organic Almond Butter slathered on a granny smith.
