Day 13 of Level One at 105degrees Academy today started with some green juice.

1 large cucumber, 2 peeled lemons, 3 apples

Then we had a tasting session with each others creations. I much preferred the ones that reminded me of holidays…with ingredients like mint, lemongrass etc.

After a green juice my GREEN superhero was busting to come out.

Remember the cheese we started fermenting the other day? It was time to put some add ins.

I chose garlic and rosemary. And before I put it in the dehydrator to develop a rind, I had to taste test quite a bit. And I think I am in love. With me. For making it. Hehe.

We’ve started talking about recipe development for breakfast foods (hence the green juice etc)

Then I broke out the tofu I made yesterday to marinate (more on that tomorrow)

And Raw Vegan Bacon. (Eggplant). There is a version in Matthew Kenney’s Everyday Raw Bringing home the (Eggplant Bacon).

Then time to dehydrate them. Do you have a dehydrator?

Then I ordered the gnocchi with arribiata sauce from the cafe for lunch. Then it was back to class to finish up and plate up our mango crepes that we made yesterday.

Can you believe I left mine at school???

Some of you have been asking for  recipes because of all the mouthwatering raw food I’ve been showcasing, here, but rest assured I already have 2 full pages of recipe ideas (and they keep growing in my head!) that I cannot wait to test when I get back home to Saudi in 2 weeks, and share with you! Just bare with me for the next 10 days whilst at culinary school and feast with your eyes icon smile Bringing home the (Eggplant Bacon) But don’t think the fun stops on this blog after my course finishes. I have alot of exciting stuff instore, including an upcoming new look and feel for the blog, so stay tuned!

Also, I always get asked (and I used to ask this question myself too when I first went Raw) do I eat 100% Raw all the time? Well the answer is no. Some days I eat raw til dinner, other days I eat raw all day and other times I only eat a raw breakfast (smoothie). Usually I try to aim for at least 70-80% of my diet being raw, which in my experience is what alot of raw foodies aim for, however of course there are some 100% raw foodies out there too. Just like with everyone, this is a personal journey and like anything in life, needs can change. For example in cooler months I might eat more soups or cooked legumes and vegetables, but in summer I might breeze through being raw all the time. I also listen to my body (intuitive eating) which I feel is much easier to do, when you haven’t junked up your body with toxic processed foods. You can actually HEAR what you body wants!   5. Robyn. I can’t read your blog anymore till you come back to Saudi, it is too tempting! I need to eat all of these amazing meals if I’m going to be drooling over my computer every single day. That cheese looks SO awesome, the texture looks perfect. And YUM for eggplant bacon! I’ll need a whole ton of that, please!

    i made eggplant bacon last night…it wasn’t crispy enough so i’ve left it in the dehydrator…just a little longer, i want it crispy!!!

    i love all of your school adventures…and i can’t wait for recipes when you’re back home…but until then, enjoy every last second!!!

    I agree, it’s all about intuitive eating- I think I’m getting to the point where I don’t consider eating in terms of raw or cooked vegan I just go with what I’m fancying. Loving salads at the mo; just can’t get enough of them x

    I looove eggplant bacon – dont make it nearly enough though – i agree, crispy is best, and i also agree that a person is better off following their own inner guidance when it comes to what foods are right for them.

    Keep on rawkin it at school!

    Your experience at 105 looks amazing. I’m currently interesting in becoming a student as well but debating between 105 and another school. If it’s okay I would like to ask you some questions about your experience so far and about accommodations, etc.
