Quick Go To Meals
Everybody has them. The meals you always go back to when time is tight, you need something you can trust and you don’t even need a recipe to follow.
Last week I had a dear friend over for dinner and I wanted to wow her with my raw food that she keeps telling me she is dying to try but I didn’t want to disappoint her.
So I called on some trusty friends (although not an entirely raw meal).
A personalised version of Tuscan Sun-Dried Tomato Pesto served with Brown Rice Crackers
Ratouille – taught to me by the father of 4 children I used to nanny in Scotland.
Sautee onion and garlic in pan til clear, add zuchinni, red capscicum, mushrooms, fresh basil, dried oregano and a large jar of passata and simmer for 30minutes.
Serve over steamed seasoned quinoa
And my favourite rocket (arugula), fennel, orange salad with honey & lemon dressing.
Finished off with banana soft serve
Served a top fresh kiwi and pineapple and topped with cacao nibs.
First class all the way.

Oh you lucky thing Noelle. I just blew up my parents blender here in Oz so I am thinking of finally getting them a Vitamix too!
I usually use 1-1.5 banana’s per person but if you don’t use it all you can just refreeze it and thaw it just before serving. I don’t reckon you can do any wrong with it

My go-to meals are roasted veggies, big salads, soups, and colcannon (kale and potatoes).

My fave raw dessert to share with others is a chocolate pudding from one of ani’s books (just avos, bananas and cocoa powder). For a main vegan meal I make a veggie chilli, which tom loves.

Go-to solid meal – raw tacos. So. Darn. Good!
Go-to liquid meal – Kristen’s Raw’s pillowy vanilla cashew mylk (I forget the order of the words in the name, but something like that).
What gorgeous semi raw meal. Def one to put up my sleeve for a Sunday vegan dinner with my non-raw partner.
