My 50/50 Dinner

Sometimes I make my dinners 50/50 cooked/raw and this night was a great example. My husband icon wink My 50/50 Dinner finds it hard to accept a fully raw evening meal, and I find it hard to make a cooked meal and not steal any of it, so I try and balance it out with a raw salad or sides.

Seeing as I had plenty of fresh basil and some tomatoes to use up I decided to try out Angela’s recipe she posted a while back for the cooked component. And glad I did!

I used wholegrain sugar free bread (we don’t much of a selection here in Saudi but when I do my monthly shop in Bahrain I love it when I can get my hands on Ezekiel bread!)

Toasted the bread into croutons.

Ready for baking.

I subbed the white sugar for agave nectar.

And served with a side of one of our favourite salads – Fattouch minus the standard croutons usually seen in this ‘breaded salad’.

This is a recipe I have been dying to share with you since I used it for my final assessment at 105 degrees! But I have just been slack. Also I NEED to share it for Jess as I sent her some of the ingredients a while back. THIS week for sure!!! Promise icon wink My 50/50 Dinner

  4. This looks wonderful, I need to try it. My hubby doesn’t handle 100% raw regularly also, so we end up with a lot of 50/50 meals.

    Yummy! I always make giant indulgent salads for my partner and I and then often add a cooked component for him too or an organic fresh veggie soup. Or I’ll cook some brown rice for him and add it to the salad so its a cold (or warm!) rice salad which feels less “raw” to him :) . Good going lady!
