Howdy everyone! Weekend begins NOW for my Saudi friends, 2 more days for everyone else icon smile Video | Chocolate Ice Cream *RAW* Any big plans? I’m hoping to hit up not one but TWO produce markets but will see how I go icon wink Video | Chocolate Ice Cream *RAW*

Here is the Chocolate Ice-Cream post I promised you a few days back in honour of Hannah who is not a big coconut fan but sure loves her choccie!  PLUS you don’t need an ice-cream maker (but icon lol Video | Chocolate Ice Cream *RAW* if you do!)

Watching it back I realise I’m a bit of a dork and need alot more practice at this…plus I was worried Dad would come home half way through and see his kitchen turned into a novice film studio icon biggrin Video | Chocolate Ice Cream *RAW*

**ATTENTION** In the video I say, 1 cup of raw agave, when in actual fact I MEAN 1/2 cup!!!

Raw Vegan Chocolate Ice-Cream

Ingredients

1 cup of cashews (soaked for 2 hours)

1/2 cup of young coconut meat

1/2 cup of raw agave*

1 1/2 cups of water

1 T vanilla extract

1/2 cup of raw cacao powder

pinch himalayan or sea salt

Method:

1. Place all ingredients in high speed blender until smooth

2. Place in freezer safe container and place in freezer until frozen, taking out of freezer periodically to stir the mixture and aerate. Alternatively place in an ice-cream maker according to instructions

    Hi Robyn, can you please clarify the quantity of agave syrup? In the recipe you write half a cup, yet in the video you say one cup. Which is it?

    *hand over heart* Aw, Rob! I love it, and I can’t help feeling that this will be the very first thing I make when I finally get my hands on a blender :) It really does come up with the texture of ice-cream, even without the ice-cream maker! And I’ve just discovered that young coconut is available even at the Coles across the road. I may or may not have squealed a little ;)

      Yay!! I really hope you like it, because I really wanted to make a Choc/Chilli or something a bit fancier but really, just choc on it’s own is deeeelicious!

      Hey I get my young coconuts from Coles and Woolies now so make sure you check out the fridge in the produce sections as well!

        Rob, the raw brownie recipe is to die for. I swear, I think it’s the best thing I’ve ever made/tasted. I could definitely get more into this raw thing ;) Shall be posting it hopefully soon, but have a bit of Melbourne to get through first!

      Haha kt you should see my first video of making choc peanut butter cups – there were ants, ANTS in the agave. And I stuffed up the chocolate!!! Too funny. Made me laugh watching it back though.

    You know I have just been wondering how to make this as well. I found the Booja Booja (cashew main ingredient) ice cream a couple of months back, which I have been meaning to buy, but it’s a bit expensive. Homemade ice cream is a lot better, and this one too is perfect as it’s the one that I have been meaning to buy and is best for me at the moment. I can also make bigger quantities as seen and for longer, for free.

    Yum! I love coconut milk based ice creams, so I’d imagine this is similar in taste? Either way it looks delicious!

      Strangely enough Errign, the coconut meat is hard to recognise, it really is there to give it the creamy smooth texture so that’s why it’s so great to use for ANY flavour combination you want :)
