Vegan Apple Pie Recipe | Naughty but Nice

Every now and then you just want to splurge on a something a little naughty and this night was no exception.

After dinner I promised the hubs a nice dessert and he said he wanted ice cream. With only 2 very small servings left, whilst he was napping on the couch after dinner, I decided I wanted a bit of apple pie to go with the ice cream.

So out came the puff pastry sheets (vegan) that have been living in the freezer for far too long for god knows what?

And the muffin pan.

And one green apple.

Sprinkle of Sucanat* and cinnamon powder.

    I love mini pies. Little, tiny, dessert are just so appealing.

    I also really enjoyed the interview. I listened while I was stuck in my hotel in OKC during the blizzard. I could listen to your accent all day.

    Utterly utterly cute! I’ve actually never ever used any kind of pastry in my life, but have heard that there are vegan versions here in Australia. I’ll have to google for info, I think, because it can get quite cold standing in the freezer aisle with the door open reading all the ingredients ;)

    So excited to listen to your podcast! Off I trot…

    Wow, that is simply amazing. Like literally simply and amazing! I think these are the kind of pies you could really enjoy on a really lazy Sunday afternoons! lol! My kids do love pies especially my little girl Maggie. I will definitely make a big batch of these for the four of them this coming Sunday! Thanks for sharing by the way! :)
