Chai Gelato & Smoothie *RAW*
Howdy folks, I’m back again with this:
Remember this cheesecake/tart from my Potluck? Well I made it from Matthew Kenney’s Everyday Raw but I changed it up a bit, but you can find the original recipe in his book.
And there was another dessert I made and forgot to share…
Chai Gelato. Yeah right, it was pretty decadent.
I used the base for the icecream from here and you don’t need an icecream maker but great if you do:
Raw Vegan Chai Gelato
Ingredients
1 cup of cashews (soaked for 2 hours)
1/2 cup of coconut oil^, melted (I put it in the dehydrator til a liquid, but if it’s warm out you can just put it outside)
1/2 cup of raw agave*
1 1/2 cups of water
1 T vanilla extract
2 t chai spice#
pinch himalayan or sea salt
Method:
1. Place all ingredients in high speed blender until smooth
2. Place in freezer safe container and place in freezer until frozen, taking out of freezer periodically to stir the mixture and aerate. Alternatively place in an ice-cream maker according to instructions
^ subbed 1/2 cup of young coconut meat mentioned in the video with 1/2 cup of coconut oil and didn’t use the cacao, instead I used a chai spice I had already made up. I added 2 teaspoons of chai spice.

Then it was time for smoothie time.
I had made up a few day’s worth of almond milk and it was chilling in the fridge, so I thought why not make it into a smoothie.
The thing I love about smoothies, and why they are usually a part of my everyday repertoire is that they are quick and easy to make, taste great and usually replace a meal for me.
Chia Gelato Smoothie
2 glasses of almond milk – I make my own
2 frozen bananas
3 generous scoops of Chia Gelato
BLEND and enjoy – makes 3 or 4 servings – but sometimes I make a batch all for me, and sip on it over a few hours – I even have a thermos bottle that helps keep it cold.

That looks heavenly! I’ll have to give that a try! Thanks for the tip. I typically do soy or coconut ice creams (so it’s not REALLY a life without) but I would love to make my own.
