Almost Raw for Me | Cooked for Him
Hola!
I’ve been a little technology AWOL this week, for a number of reasons:
- We had an unusually long weekend this past weekend, so that meant more family time
- Unlike most other expats who live here in Saudi with us who made the most of it by going away for a short break, we had our own little staycation which involved plenty of home organization, trips to Ikea, the hardware store and ticking items off the honey do list! (yep pregnancy nesting has begun alright!)
I’ve also hit the 3rd trimester pregnancy exhaustion (I think!) It’s either that, or not eating so great over the weekend or not being active for a week (doing my usual group fitness classes), or a combination of the three. So it’s left me feeling a little meh.
Until today
A few green juices, a trip to the supermarket to stock up on some yummies, and 2 days of pretty much doing nothing has me refreshed and ready to get back on track.
For dinner today I really wanted to go all raw, which is not usually the case in our raw/omni household, as I tend to eat raw till dinner, however sometimes I manage to wangle the right kind of dish we were are all happy.

Thanks to Christine of The Raw Project, I used her Broccoli Hemp Seed Pesto with a slight adjustment (I just added some cracked black pepper to taste and 2 tbsp of nutritional yeast to the original recipe. Perfect. And hit the spot too. You can grab the recipe from The Raw Project here.

This is such a great way to get raw broccoli into your diet, as it can sometimes be a little too labour intensive crunching down on the florets in a salad (although I’ve been craving raw broccoli big time of late!). And it’s a tasty way to get some sneaky greens into your kid’s meal without them even knowing it! Oh and it’s a nut free pesto. Win, win, win!
I served mine with raw zucchini pasta that I had massaged with a tiny amount of salt to soften and some canned cooked chickpeas and cherry tomatoes.
Manus and Pat enjoyed theirs with gluten free pasta, chickpeas and cherry tomatoes – Pat just added a little extra olive oil and salt.
Delish.

Glad you liked the pesto and thanks for the shout out. Raw broccoli is not my fave and I’m always trying new recipes to enjoy it raw.
