Howdy, there, how’s your weekend if you’re in the normal part of the world?
Sadly today is our second week in the working week, but hey, not bad when Wednesday is our Friday!

But onto today.

I’ve been hanging out with this little dude, as I head into my 28th week of pregnancy, I am finding most of my energy is in the mornings. Swim play dates have been the order of the day, and as we all know, swimming makes you hungry, so I can home to my ready made salad in the fridge (as per my Kitchen Pre Prep guide) but with the arrival in the mail yesterday of this new gadget – microplane with a grater attachment.

Yep, that is a pile of fluffy finely grated macadamia nuts right there. Couldn’t you just dive in?

Made into shaved mozzarella raw vegan style.

Delcious topping for my usual ‘throw everything in my salad’ salad toppped with more of the mozzarella cheese and my dressing love, spa salad dressing – as much as I love this dressing, next week I promise to make something new.
