As I write this I am still pregnant with 1 day left to my supposed due date (it’s changed throughout the pregnancy). Like my first baby, I’m thinking this one is just very comfortable inside. She’ll arrive when she’s ready icon smile Waiting, waiting, waiting...

As a symptom of late pregnancy, or so I’m told, between the bouts of extreme tiredness, there are cliqued bursts of ‘nesting’ energy and this week has been no exception.

First up, in a bid to clean out our fridge & pantry to make way for shopping day, I decided to take everything out of the fridge that was REALLY close to expiring, then deciding what I could make good use of.

I made a vegetable bake.

Then a massive pressure cooker pot of vegetable & bean soup – no recipe, just threw everything in (sweet potato, zucchini, tin of tomatoes, celery, onion, garlic, tin of black beans, organic vegetable broth, herbs and seasonings) then blended into thick soup when cooked.

Dehydrated some pears that were NOT going to make into any smoothie, juice or snack anytime soon. Sprinkled with cinnamon then dehydrated for 10 hours. Delicious.

Chickpea & Veggie Burgers

I used Dreena Burton’s Chickpea Sensation Patties as a base from her Eat Drink Be Vegan recipe book but you may also find the recipe online by googling.

I kinda eyeballed everything, didn’t follow the recipe (although I have in the past and it’s delicious!), had some left over cooked brown rice to throw in, and seasoned with tinned chickpeas, sauteed onion & celery, with seasonings and small amount of oats to bind.

Also the recipe calls for pan frying the patties, but I NEVER NEVER have any success with home made veggie burgers holding their shape. This time I had success.

I formed burger sized patties on a greased baking sheet and baked at 400ºF/200ºC for approx 15/20mins (keep an eye they don’t burn on the bottom),then when they are firm enough, flip them and bake for another 15/20mins. If they don’t flip easily (they will still be soft but should hold their shape) then bake for a few more minutes until they are firm.

You can enjoy them straight out of the oven or keep them for later and reheat.

    Hi Robbie, wow still waiting huh? Or maybe yo’ure in labour now… As unique as you are I’ve never heard of anyone ‘nesting’ in their kitchen lol. Only you and the results look great too!
    Our bubba Isabella is 5 months old today and she’s growing so fast. Sitting up, on solids and keen as mustard to crawl (only at the bum in the air stage ATM). Girls are so precious. But we knew that hey!
    Anyways lovely best of lucky with your next achievement. She’ll be in your arms before you know it and can’t wait to see some pics.
