Happy Monday friends! Are you all back at work now? It’s been a little slow start to the year for us, we’ve just been chilling at home, planning our next holidays unpacking from our holidays, and thinking about our goals for 2012 whilst enjoying the weather as the cold snap has departed. I never used to really dig mangoes, don’t ask me why, but now I love them and cannot get enough of them. And when I saw the Kensington Pride mangoes for sale at our local supermarket this week, I bought up a couple to remind me of the summer I am missing back home right now. Recipe | Raw Vegan Ice cream Sandwiches

Ever since I posted this picture on facebook, I’ve been inundated with requests for the recipe, so here my blog friends, it finally is. Raw Vegan Ice Cream Sandwiches Ingredients: Ice Cream – follow the recipe from here but I didn’t use the cacao powder, I kept my ice cream vanilla flavoured. You can choose any flavour you like. Sandwiches: 1 cup of desiccated or shredded coconut (I used desiccated) 2 T of almond flour* 1/3 cup of cacao powder 1/4 cup of agave nectar 2 T of coconut oil 1 t vanilla extract pinch salt Combine all ingredients in a food processor fitted with an S blade and combine until sticky.
